Japanese sake is crafted primarily from rice and water. By adding koji mold and yeast, and carefully fermenting the mixture over a period of more than a month and a half, the result is a smooth, refined alcoholic flavor.

Embracing the traditional techniques and philosophy of Japanese sake-making, We are committed to evolving into the new concept of “Global Sake,” blending Japanese ingredients with Italian-sourced raw materials.

Water meets rice.

Our sake brewing carries on the traditions of the Noto region in Ishikawa Prefecture. After searching across Europe, we discovered natural water from the Dolomites and established our brewery in northern Italy.

We use carefully selected organic rice from Vercelli in the Piedmont region, grown without pesticides or chemical fertilizers. By recognizing and enhancing the quality of the ingredients, we enable sustainable sake production.

And it begins.

This is Italy’s premier location for sake brewing, where high-quality water and rice come together in perfect harmony. The sake we produce here offers a freshness and authentic flavor that rivals Japanese sake made in Japan.

Our Selection

This sake is produced with ultra-soft volcanic water, a rarity in the Dolomites. Even softer than Japanese water, it allows the flavors of the rice to melt even in cold water, creating an intense and persistent taste experience.

The rice, cultivated in Vercelli using completely natural methods and irrigated with the water of Monte Rosa, is rich in vitamins and has a pleasant acidity.

The aroma is reminiscent of ripe banana and melon, while the taste offers a balance of acidity and notes of walnut and banana. Enjoy it as an aperitif or pair it with red meat or dishes with a ginger kick.
