Japanese sake is crafted primarily from rice and water. By adding koji mold and yeast, and carefully fermenting the mixture over a period of more than a month and a half, the result is a smooth, refined alcoholic flavor. With an alcohol content of 14%, comparable to that of wine, sake is classified as a “brewed beverage” rather than a “distilled spirit” like shochu, which has a higher alcohol content.

The live yeast used in sake production is incredibly delicate and undergoes constant transformation, requiring an exceptionally clean environment and meticulous, patient craftsmanship. This unique production method sets sake apart from all other beverages.

The growing interest in Japanese culture—sparked by the 2015 Milan Expo—continues to thrive with the rising popularity of Japanese cuisine, ramen, matcha, bonsai, anime, and sake.

This cultural wave serves as a strong tailwind for our endeavors. The curiosity and deep appreciation for authenticity shown by the Italian people have profoundly moved us. Inspired by their intellectual curiosity, we aim to share the true charm of Japan’s authentic food culture more deeply through sake.

By establishing a sake brewery in northern Italy, we will provide a place where people can experience genuine Japanese sake firsthand. We believe this initiative will not only deepen the appreciation for sake but also contribute to the broader dissemination and development of Japanese culture.

About the Water

Our sake brewing methods are inspired by the traditions of the Noto region in Ishikawa Prefecture, one of Japan’s renowned sake-producing areas. Using soft water known for its smooth texture, we create a robust flavor rich in umami.

Since most water sources in Europe are hard water, we spent over a year traveling across Italy, conducting water quality tests to find the perfect soft water for brewing sake. Finally, we discovered high-quality natural water at the foot of the Dolomites and decided to establish our brewery there.

With access to optimal soft water, we can avoid the need for filtration systems or additional additives, enabling us to carry out the most natural brewing process possible.

About the Rice

Italy is Europe’s top producer of rice. Among its many varieties, we use carefully selected organic rice from Vercelli in the Piedmont region, grown without pesticides or chemical fertilizers. The vibrant ecosystem, with its diverse range of living organisms, enriches the soil and promotes the cultivation of high-quality rice.

To maximize the natural umami of this rice, we minimize the degree of polishing, which is a unique feature of our sake. By appreciating and utilizing the inherent quality of the ingredients, we achieve sustainable sake production.

Our Spirit

Japan’s “Traditional Sake Brewing,” with over 500 years of history, was inscribed on UNESCO's Intangible Cultural Heritage list in December 2024. In northern Italy, we honor the traditional techniques and spirit of Japanese sake-making while crafting a one-of-a-kind sake inspired by the fertile lands and blessings of the Alps.

Even in Italy, you can experience the authentic charm of Japanese sake and immerse yourself in the richness of Japanese culture. As pioneers and challengers of “Global sake,” we remain steadfast, bold, and committed to pursuing the creation of beautifully crafted flavors.
